Bok Choy Salad

Perfectly grilled bok choy with a flavor explosion

Direction

  1. STEP 1
    Grill the bok choy in a grill pan for 3 minutes each side. Season with salt and pepper.
     

  2. STEP 2
    Slice the radish, cherry tomatoes, baked beets, cauliflower, and 1/2 an avocado.
     

  3.  STEP 3
    In a bowl, combine the cooked quinoa, arugula, kimchi, and all the remaining ingredients.
     

  4. STEP 4
    Serve the salad with the sesame dressing.

Sesame Dressing

1/4 Cup Brown Sugar, 1/4 Cup Olive Oil, 2Ts Red Wine Vinegar, 2Tb toasted sesame seeds, 1Ts Soy Sauce

2-3 Bok Choy, Arugula, Kimchi, Quinoa, cooked Cauliflower, Baked Beets, Radish, Avocado, Cherry Tomatoes, Sesame Dressing, Salt, Pepper
